This is my easiest summer dinner when I’m staring into the fridge and don’t know what to make. You press raw ground beef right into raw hollowed zucchini halves, tuck in just two more simple ingredients, and slide the glass baking dish into the oven. It’s a very Midwestern, no-fuss kind of meal: hearty, comforting, and light enough for warm evenings. Everything bakes together in one pan, and the zucchini turns tender while the beef gets juicy and flavorful.

I like to serve these beef-stuffed zucchini boats with a simple green salad or sliced cucumbers and tomatoes on the side to keep things fresh. Buttered egg noodles or crusty bread are great for soaking up the juices from the pan. A little extra grated Parmesan at the table never hurts, and if your family likes a bit of heat, set out crushed red pepper so everyone can season their own.
Oven-Baked 4-Ingredient Beef Stuffed Zucchini

Ingredients
4 medium zucchini
1 pound ground beef (80–90% lean)
1 1/2 cups jarred marinara or pasta sauce
1 cup shredded mozzarella cheese
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon dried Italian seasoning or dried oregano (optional, but recommended)
Olive oil or cooking spray, for greasing the dish

Directions
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch glass baking dish with a little olive oil or cooking spray so the zucchini doesn’t stick.
Wash the zucchini and trim off the stem ends. Slice each zucchini in half lengthwise to make long boats. Using a spoon, gently scoop out the center seeds and some of the flesh to create a hollow channel in each half, leaving about 1/4 inch of zucchini all around so they stay sturdy.

Arrange the hollowed zucchini halves, cut side up, snugly in the greased glass baking dish. If they wobble, you can shave a tiny slice off the rounded bottom so they sit flat.
In a medium bowl, mix the ground beef with the salt, black pepper, and dried Italian seasoning (if using). Use a fork or your hands to combine just until the seasonings are evenly distributed; don’t overwork the meat.
With clean hands, pinch off portions of the raw seasoned ground beef and press it firmly into the hollowed centers of each zucchini half. Press the meat all the way from end to end so it fills the channel evenly and sits just slightly mounded above the edges.

Pour the marinara sauce evenly around and in between the stuffed zucchini in the glass baking dish, letting a little sauce run over the tops if you like. This keeps everything moist and gives you a built-in sauce for serving.
Cover the dish tightly with foil and bake in the preheated oven for 30 minutes, until the zucchini is starting to soften and the beef is mostly cooked through.
Carefully remove the foil and sprinkle the shredded mozzarella evenly over the tops of the beef-stuffed zucchini. Return the uncovered dish to the oven and bake for another 10–15 minutes, or until the cheese is melted and lightly golden and an instant-read thermometer inserted into the center of the beef in a zucchini boat reads at least 160°F (71°C).

Let the stuffed zucchini rest for 5–10 minutes before serving so the juices settle and they’re easier to lift out of the dish. Spoon some of the warm marinara from the bottom of the pan over each serving.
Variations & Tips
For picky eaters, you can use a very mild marinara and skip the Italian seasoning so the flavors stay simple, then let kids sprinkle their own cheese at the table. If your family loves extra cheese, add a layer of grated Parmesan on top of the mozzarella in the last bake. You can also swap mozzarella for a pre-shredded Italian blend or even cheddar if that’s what you have on hand.

For a slightly lighter version, use lean ground beef or a mix of beef and ground turkey; just keep an eye on the baking time and be sure the internal temperature still reaches 160°F (71°C) for safety. If your zucchini are very large, you may need a bit more sauce and cheese and a few extra minutes of baking. To add more veggies, finely chop some of the scooped-out zucchini centers and gently mix them into the raw ground beef before pressing it into the boats.
